21-Day Lockdown Day 1

A PERSON IS SMART


Officially, today is the start of South Africa's 21-day lockdown.  Judging from all the people still doing their own thing on the streets, I don't think we've ever had one before.

A person, you see is smart but people are stupid.  When we're in a crowd, we worry about what others think about us, how we look, how we sound.  Instead of being safe and considerate to others, people will go to the shops without masks or gloves on .

So think about the last few days in SA and the people-logged shops: how many of them did you witness wearing their masks and gloves while shopping?  Hmm, a minuscule number, I bet.

How many were sick and didn't know it? But no worries, we'll all know it soon enough cos those coronavirus or Covid-19 numbers are climbing rapidly.

This is how fast it spreads, people. Patient 31 has infected 5000 people-do you think she thought she even knew 5000 people?!

Be safe and stay at home and let's get creative.

Today we're going to use our garlic before it gets all weird and gross. The health benefits of garlic and thyme are legendary so don't waste time (pardon the pun) and let's cook.

GARLIC AND THYME CONFIT






4 heads of garlic, peeled
1 teaspoon salt
1/2 bunch of fresh thyme or rosemary
enough oil to cover the garlic
Clean jar

In a small pot, place all the garlic cloves, salt, thyme, and enough oil to cover the garlic.
Allow to come to a boil, maybe 15 min, and give it a gentle stir. Take the pot off the heat and allow to cool completely.  When cold, empty the contents of the pot into a clean glass jar.

The kids love it cos the garlic is so soft that it can be spread on toast, topped with cheese and eaten.
It doesn't have that overpowering garlic sharpness but is creamy and gently flavoursome.

Use it in a variety of dishes like creamy pasta sauces, sandwiches, garlic bread,  pizzas etc.  You can added it after it's baked or cooked to get that garlicky goodness.

TIP: oil hardens in the cold so this can be stored in your cupboard or countertop.
