Vegetarian Bolognese

WE ARE THE WORLD


I don't envy our President.  He has had to make some really tough decisions and face pretty harsh criticism in these 30 days.  Yes, the majority of us understand and applaud his decision regardless of the mammoth task it seems,yet there are those of us who can't seem to think beyond themselves!



These people can't move beyond thinking about only themselves, they have an "I" mentality. 

I need....
I want....
I have....
I must have
I, I, I,...

They roam the streets, flout the lockdown and don't give a damn about anyone but themselves. 

"Stay at home!" I want to shout out my window.  It's fine if they don't want to live, but don't they care about bringing the virus home to their loved ones or spreading it more so to others who have genuine reasons for being out. And buying a 2L Coke is NOT a valid reason.

Yet if there is at least one lesson we take away from this Covid-19 pandemic, it is that the world does not belong to "I".

Too often when we introduce ourselves, we list our "I"s....I am a ...insert here.(work title) (education title) (any title).  We don't define ourselves by our families, by the ones we love so much, but rather by what work we do and the external accomplishments.

Now when we are stuck together with our families or alone, we remember who we are and what we stand for.  There's no work side to me, there's no public view, it's just me in my most honest form.  Embrace who you are. You are more than your trials, more than your job description, more than your title.  If you don't like something about yourself, CHANGE IT. Don't make excuses, don't blame others.

There are 7.8 billion people in this world and those that love you are the ones you are spending this time with.  So no matter how annoying or how flawed you think they are, they love YOU with all your insecurities, your annoying little habits and your flaws (you know you have them) 




Maybe the people who are roaming around the streets, using every excuse to shop (for utter nonsense!) can't stand to be alone with themselves.  I wonder if they are taking the "essential staff" as a personal affront-I hope not!

Enough of trying to understand people.  I suck at it.

It's great being at home.  You can eat anything and everything you want.  Just don't think it magically goes into a lockdown tummy somewhere in the next galaxy.

Here is a flavourful, meat-free recipe courtesy of Rhodes Foods.

Vegetarian Bolognese





1 tbsp oil
1 onion, chopped
1 garlic clove, crushed
2 carrots, chopped
2 celery sticks, chopped
1 large leek, chopped
1 x 410 g can chopped & peeled tomatoes
1 x 115 g Rhodes tomato paste Cup
125 ml (½ C) water
2 x 410 g cans brown lentils, drained and rinsed
1tsp Italian herbs or Oregano
salt and freshly ground black pepper
to serve:
500 g spaghetti, cooked
grated parmesan cheese (optional)

Heat the oil in a large saucepan and fry the onion until soft and translucent.
Add the garlic and fry for a minute more.
Add the carrot, celery and leeks.
Reduce the heat and fry gently until the vegetables are softened and fragrant.
Add the tomatoes, tomato paste, herbs and the water and bring to the boil.
Reduce the heat, add the lentils and simmer for 10 minutes until heated through.
Season to taste with salt and pepper.

Serve hot over pasta and sprinkle with grated parmesan cheese.
